• 1 avocado
• 50g brazil nuts
• 1 handful fresh mint leaves
• Juice of 1 lime
• 2 tbsp olive oil
• salt and pepper
• 2 courgettes
• 1 tsp olive oil
1) Prepare the courgette spaguetti by simple putting the courgettes through the spiralizer. Gently heat them in a frying pan with the olive oil for about 5 minutes until they are soft.
2) While the spaguetti cook, place the nuts into a food processor and blend for 1 minute until they are crushed. Then add the avocado, fresh mint leaves, olive oil, juiced lime and a bit of salt and pepper. Blend all together until you get a nice and creamy sauce.
3) Mix the spaguettis and pesto in a bowl and serve.
